Find a Great Healthy Meal Recipe for Home

Whipping up healthy meals recipes should not be too difficult a task for time-pressed modern professionals of today. Consuming easy healthy meals will not only help you maintain your weight and stay fit but will also keep you away from the harmful effects of unhealthy junk food and other snacks which lead to a whole gamut of health problems down the line. One such recipe is Baked Mixed Vegetables which can easily be prepared at home. Cooking and preparation time are 15 minutes alike while four people can be served with the current recipe.

The ingredients that you will need include three medium brinjals which are sliced, a medium green capsicum which is sliced and seeded and a medium red capsicum that is sliced and seeded. Salt is required to taste along with four tablespoons of Garlic and Oregano Nutralite in addition to two medium onions cut in round slices and with the rings being separated, ½ cup of vegetable stock, 10-12 crushed black peppercorns, ½ cup of fresh bread crumbs, ½ cup of grated cheese, tomato sauce and cheese sauce. You should first get your oven preheated to 200 degrees Celsius while sprinkling the brinjals with some salt. Leave for 30 minutes in colander and then rinse in cold water and dry well.

Arrange on baking tray and grill in oven until the golden brown color is seen. Heat two tablespoons of the Garlic and Oregano Nutralite in the non-stick pan. Add onion rings before sautéing for one minute. Add capsicums and sauté for a couple of minutes. Heat remaining Nutralite in non-stick pan and put garlic before sautéing for one minute. Add tomato and sauté for 2-3 minutes. Add bay leaf, peppercorns and salt. Cook for 2-3 minutes till you get a thick sauce. Add cheese to white sauce and mix and then add it into tomato sauce with 1/4th cup of vegetable stock. Cook till boiling point. Remove from flame and strain well. In the baking dish, create layers of green and red capsicums along with onions and potatoes in addition to brinjals. Sprinkle crushed peppercorns and salt on every layer. Pour the sauce all over the same. Put in grated cheese and fresh bread crumbs for the top and bake for 20 minutes until you see a golden hue for the cheese. Serve piping hot with brown bread.
