Start your breakfast with delicious fruit cake

Everyone knows the perfect fruit cake is full of surprises and is the ideal breakfast with a fresh cup of tea. But it’s hard to find the one that we can all agree on. So here’s a guide to making the perfect fruit cake. 

IFF cake flavour

 Ingredients to add:


  • 1 1/2 cups diced dried pineapple
  • 1 1/2 cups raisins
  • 1 cup diced dried apricots
  • 1 1/2 cups chopped dates
  • heaping 1 cup candied red cherries, plus additional for decoration, if desired

You can change fruits according to your taste or preference.


  • 16 tablespoons butter, at room temperature, at least 65°F
  • 2 cups dark brown sugar
  • One teaspoon salt
  • One teaspoon cinnamon if desired
  • One teaspoon baking powder
  • ½ teaspoon oil
  • Four large eggs, at room temperature
  • 3 cups All-Purpose Flour
  • One teaspoon orange flavour
  • One teaspoon vanilla powder flavour
  • Two tablespoons black cocoa, optional
  • 1/4 cup golden syrup
  • 1/2 cup apple juice, cranberry juice or water or milk
  • 2 cups chopped, toasted nuts (almonds, walnuts, berries)

Topping/glaze (optional)

  • rum, brandy, simple syrup, or vanilla syrup

Instructions to make the perfect cake/Fruitcake recipe

  • Preheat the oven to 225°F. Choose your pan, and lightly grease it with a little bit of oil and all-purpose flour.
  • Place the butter and sugar in a large bowl and beat together until well combined.
  • Beat in the salt, spices, and baking powder.
  • Beat in the eggs one at a time and in a separate bowl whisk flour and cocoa together.
  • Add the flour mixture and the syrup to the mix in the bowl beating gently to combine.
  • Stir the fruit in the juice or water and the nuts. Scrape the bottom and sides of the bowl.
  • Spoon the batter into the pan and add vanilla and orange flavour to it.
  • Bake the cakes on the middle shelf of the oven at 180°F for at least one and a half hours. Check whether the cake is done or not by inserting the toothpick in the middle, and if it is done, the toothpick will come out clean.
  • Remove the cake from the oven. You can leave the fruitcake in its pan for storage if desired. Or carefully remove the cake from the pan after about 5 minutes, loosening its edges first.
  • Brush the warm cake with rum or brandy. Or simple syrup, or simple flavoured syrup (vanilla, rum-flavoured, etc.). 
  • The cake is ready to be served!
