Try These Tips and Tricks to Get Veggies Into Breakfast

It’s no secret that veggies are just plain good for us, and we can seemingly never get enough of them. For lunch and dinner, getting your serving of vegetables is a breeze, but at breakfast, it seems like we skip the greens because they don’t fit into the standard bacon and eggs plate. However, adding vegetables to the most important meal of the day can be easy if you get a little creative. Here are a couple of ideas to try out in the morning.

Boost Your Avocado Toast

If you’re like most, toasters are probably staples in your breakfast routine, and with that comes a staple breakfast dish. Avocado toast is a breakfast essential for many of us, but since avocados are technically a fruit, if you’re looking for tasty ways to get more veggies in your life, this is an excellent place to start.

While your bread is toasting, sauté some fresh spinach or kale until slightly wilted. Next, smash your avocado onto your toast like normal, but finish it off with the greens for a vitamin, mineral, and healthy fat-packed treat to start your morning off right.

On the Go? No Problem

If you have eggs, veggies, and a muffin pan, you have everything that you need to make some cute and tasty mini frittatas. Grease your muffin pan and crack an egg in each one. After that, roughly chop up some spinach and slice a few cherry tomatoes and add both to the eggs. Mix it up, and once a few minutes in the oven have passed by, you’ll have bite-sized frittatas you can take with you on the go. The best part is that you can make these ahead of time if you know that you have busy mornings coming up.

Perhaps the easiest way to get more veggies into your mornings is to make a green smoothie. It seems like blenders were practically invented for smoothies because they do such an excellent job of chopping and mixing ingredients together at the press of a button.

If you have a high-powered blender, throw a handful of spinach or kale into the jug along with frozen fruit, protein powder, yogurt, or any other ingredient you think would work well in the recipe. After a few pulses, you have a quick and easy breakfast smoothie loaded with all of the green goodness veggies provide.

When in Doubt, Scramble It

Short on time or aren’t inspired? It happens to the best of us. When you aren’t sure what you want to make but know you need some early morning vegetables, simply scramble them together with some eggs. You can try chopping peppers, mushrooms, spinach, kale, or a mix of all of them and sautéing them in a pan. To complete it, crack a couple of eggs and scramble the whole dish together. This is a quick and simple veggie-loaded breakfast and will be ready in the time it takes your electric kettle to boil.
